We are having the greatest summer, can you tell? We had a "Brother/Sister" weekend with Dustin's family, and it was a blast! We were a bit crowded, but no one seemed to mind, and we had a great weekend of togetherness. Everyone arrived by Friday afternoon, and we had fun playing on the lake, catching frogs, paddle-boating, and eating!

Saturday morning, we had a big breakfast and then decided to head over to Bear World. It has a drive-through park with bears, deer, elk, buffalo, mountain goats, etc, and then a fun gift shop, petting zoo, and small amusement park. We had been once before, and it was fun, but this time it was amazing. The bears were all over, and so active! Several were on the road, and some came right up to the cars...it was so cool,and kind of scary! Everyone loved it. The kids had a great time at the petting zoo and riding the little rides.

Hudson loves his hat, and loves to wear it LOW. It's hilarious. He walks around like this all day. Everyday.
After Bear World, We took the the family to Big Jud's, to enjoy some world famous Burgers! They were quite fabulous, big greasy things, yum! It is quite a road-show to take 9 adults and 11 kids anywhere, especially out to eat, it was worth it!
We had more fun lake time on Saturday afternoon, and then Dustin delighted us again with Navajo Tacos and scones for dinner. Heavenly.
We finished up with a campfire and s'mores. Everyone trickled out on Sunday, and we have been missing the chaos! Good memories, for sure! Love to all the Chambers family who made the trek!
oh, and a quick squash update: we are getting a harvest like this every couple of days! AHH, any recipe ideas???
I have a yummy recipe for that yellow squash, here it is:
ReplyDeleteSquash Casserole
3 lbs. Yellow crook neck squash, about 4 cups or more
1 small onion, chopped (it's good Dustin)
1 tube Ritz crackers, crushed
3 eggs
1 stick butter, melted
1 Tbl. sugar
salt and pepper
Cook, drain and mash squash. Add onions, eggs, salt and pepper, 1/2 the butter. Fold in 1/2 of the crackers. Place in 8x8 casserole. Combine remaining crackers and butter. Sprinkle over the top and bake at 375 for about 20 minutes.
Optional: grated cheese folded into the casserole
You and Dustin are quite the successful gardeners!!

ReplyDeleteI slice my squash up into rings and thow it in the frying pan with spray butter and sprinkle with parmesean cheese, salt and pepper. It's really good, easy and healthy!
I heard about the fabulous weekend and about how you are the hostess with the mostess. Your lake looks amazing, I need to see it one day..
ReplyDeleteNow for squash, Yummy doesn't it make you feel good that you grew it fresh and are eating it. I don't know alot to do with squash but I"ll update you when I find some. We are beaners right now being over ran with them. So here is one i"m trying today.
Crispy Parmesan Ranch Crusted Green Beans
¾ Cup prepared Ranch Dressing
1 egg, beaten
1 ½ Cups panko bread crumbs
½ Cup grated parmesan cheese
¼ teaspoon salt
¼ teaspoon pepper
½ lb washed and trimmed fresh green beans
1. Preheat oven to 450 degrees F. Combine ranch dressing and egg together in a shallow dish. Combine panko, parmesan, salt and pepper in a separate shallow dish. Lightly dip beans into ranch dressing. Press into crumb mixture then place onto a parchment lined baking sheet (they’ll stick to the pan if not, even if sprayed with cooking spray). Do this process until all beans have been coated. Bake for 15 minutes or until crust is crispy and golden. Let cool for 3 minutes then serve.
